The pomegranate is an undeniably alluring fruit. While peeling away its tough leathery skin can take some patience, the effort is well rewarded with the fruit’s jewel-like ruby red seeds. The pomegranate appears in ancient Greek mythology cultivated for thousands of years. Today it is prised for its vitamin and antioxidant-rich arils that boast benefits for your body, inside and out.
Needless to say, the pomegranate is one of our favorite fall fruits. Tangy and sweet, its juice is perfect for a cocktail. This Pomegranate Mab-Tini leans into the bright juicy flavor of the pomegranate by pairing it with citrusy sweet meyer lemon (and no added sugar). The fruity tart flavors subdue the earthy herbal notes of the Mab Tab for a perfectly balanced end of the day refreshment. We think the addition of herbs elevates its status from cocktail to health tonic (you’re welcome 😉). We hope you enjoy it!
Ingredients (makes two cocktails):
3 oz fresh pomegranate juice (have 2 pomegranates on hand to ensure you have enough)
Juice of 1 meyer lemon*
3 oz gin **
1 Mab Tab
Float of club soda
Pomegranate arils and a lemon twist for garnish
* If you can’t find meyer lemons, a standard variety lemon will work, but you may need to add a little simple syrup as they are significantly more tart.
** To make this cocktail a mocktail, skip the gin, add extra club soda, and pour over ice. It’s incredibly good as mocktail spritzer!
Make pomegranate juice by slicing fruit in half and juicing with a citrus reamer. Measure out pomegranate juice and drop in Mab Tab to dissolve. Juice Meyer Lemon.
Add fruit juices and gin to a shaker or jar filled with ice. Shake until chilled and pour evenly into two Coup or Martini glasses.
Top each cocktail with a float of club soda and garnish with pomegranate arils and a lemon wheel or twist.
