The Pollinators Delight is our riff on the century old classic cocktail, the Bee’s Knees. It’s brightly citrusy and refreshing with just enough sweetness from honey to balance the tart lemon. We’ve added lavender for a fragrant and relaxing element, and – of course- we’ve dropped in a Calm Mab Tab to really take the chill vibe to the next level. 

Ps. While we’ve crafted this as a cocktail, we love it as a mocktail too – essentially a delicious sparkling lavender lemonade – yum!

Lavendar Honey syrup: 
1 teaspoon dried lavender buds
2 oz organic honey
2 oz filtered water

½-¾ oz Lavender Honey syrup 
Juice of one whole lemon
Calm Mab Tab
1.5 oz Gin or Vodka (optional) **
Sparkling water

First, make the lavender honey syrup. Add honey, water, and lavender to a small saucepan. Stir ingredients to begin to dissolve the honey. Gently heat just enough to thoroughly dissolve honey making sure not to overheat or boil the mixture. Once honey is warmed, turn off the heat and stir again. Leave to steep for at least 15 minutes and up to one hour. Strain lavender from honey into a glass jar. There will be extra lavender honey syrup leftover for another batch of cocktails or to add to tea, coffee, lemonade- whatever you like!  Store syrup in the fridge.

Drop a Mab Tab into a small glass. Squeeze juice from one lemon and pour into glass with 1.5 oz gin or water if making a mocktail. Give it good stir and set aside to finish dissolving the Mab Tab. 

 Fill a glass with ice cubes. Add in lemon + Mab Tab mixutre, honey syrup. Top with sparking water and gently stir to combine. Garnish with lemon peel and a spring of fresh lavender.
